Avocado with Egg and Ham Quick Salad

At first glance today’s Avocado with Egg and Ham Quick Salad recipe  might not look like much, I know, but is summer so is all about fun and vitamins and with the heat over here one wants to reduce the time spent in the kitchen right? I’m a big fan of salads but for this one I have quite an obsession. I have made this salad over and over,  again this summer and I can’t get enough of it . When it’s about salad it all comes down to the dressing, I paired this one with a delicious golden mustard vinaigrette that’s spicy enough to enhance the flavors of the egg and avocado but not overpower the salad and just for the fun factor on the plate I sprinkle it with sesame seeds for an extra crunch bit and delicate nutty flavor. Now, I must warn you, it is so good that you will crave this colorful salad for breakfast, lunch, and dinner, and in-between! But you won’t feel guilty for this craving because it’s something that will nourish your body with all the vitamins, fatty acids, omega’s and essential oils that our body needs.

This recipe yields  for 4 portions.

Ingredients for Avocado with Egg and Ham Quick Salad:

  • 4 eggs
  • 250 g arugula
  • 100 g ham
  • 2 ripe avocados
  • 2 tbsp. lemon juice
  • 1 red onion
  • 100 g olives
  • 2 tbsp. sesame seeds
  • For the mustard dressing:
  • 1 tsp. English Mustard
  • 1 tsp. honey
  • 1 clove of garlic
  • 3 tbsp. olive oil
  • 1 tbsp. vinegar
  • freshly ground pepper

Preparation Method for Avocado with Egg and Ham Quick Salad:

Start by hard boiling the eggs, when they are ready peel them and cut them into eighths. In a small blender or by hand with a whisk, mix the ingredients for the dressing.

Peel the avocados carefully and remove the seeds than slice them into narrow wedges and sprinkle with lemon juice. Peel and halve the onion, cut one half into thin rings and chop the other half finely. In a large bowl mix gentle the avocados with the arugula and onions and olives. Divide the mix over four plates. Shape the ham slices in florets and place them over the green layer of salad together with the eggs wedges. Pour the dressing over the salad and sprinkle it with sesame seeds and voila the Avocado with Egg and Ham Quick Salad is ready to be served.
