Blue Cheese Appetizer

Although I believe in routines and I am sure they are beneficial for my mind and for my body, I am always prepared to meet the unexpected. This week, the unexpected came in the form of guests for dinner. I told myself not to panic, I reviewed the contents of my refrigerator, then I came up with this Blue Cheese Appetizer recipe. This recipe serves 4 persons.

Ingredients list for Blue Cheese Appetizer:

  • 2 red apples (Gala, Pink Lady)
  • 2 dl white wine
  • 3 tbs honey
  • 4 fresh figs
  • 150 gr blue cheese (Roquefort or Gorgonzola), crumbled

 

Preparation method for Blue Cheese Appetizer:

Always begin by washing the apples. It is not recommended to wash them before storing them in the fridge, because the wax they have on is supposed to help prolong shelf life. Therefore: wash the apples, then remove the seeds with an apple corer. Slice the apples horizontally, in order to get nice round slices.

Pour the wine in a small pan, add the honey and heat everything on medium fire. When the wine-honey mixture is gently simmering, lower the fire and add the apple slices. Boil the apple slices for 4 minutes. They should become softer, but not too soft to retain their shape. Lay the apple slices on four plates. Lower the heat even further, but keep simmering the wine-honey sauce until it becomes a thick syrup.

Wash the fresh figs, then cut them in quarters. Add the figs to the wine syrup, quickly remove them from the pan and distribute them evenly on the four plates, over the apple slices. Spoon the wine-honey syrup all over the four plates, then top with crumbled blue cheese.

This is an exquisite, quite and surprising appetizer, which I am sure even the pickiest of guests will appreciate. Give it a try, then let me know how your unexpected dinner went.
