Chinese Cashew Chicken

Ingredients list for Chinese Cashew Chicken:
- 500gr boneless chicken thighs
- 1 ½ tbs corn starch
- 3 tbs coconut oil
- 1 onion, diced
- 5 garlic cloves, minced
- 2 tsp fresh ginger, grated
- 2/3 cup cashews
- 1/3 cup water
- 3 tbs hoisin sauce
- 1 tbs soy sauce
- 1 tbs rice vinegar
- ½ tbs honey
- salt and pepper
Preparation method for Chinese Cashew Chicken:
Pop 1 tablespoon corn starch into a plastic Ziploc bag, together with some salt and pepper. Add the diced chicken thighs and toss around until the chicken pieces are evenly coated. Heat 2 tablespoons of coconut oil in the wok. Fry the chicken pieces for 3-4 minutes, then transfer to a plate.
Add 1 tablespoon of coconut oil to the wok, heat it and fry the onion until golden-brown – about 5-7 minutes. Add the garlic, ginger and cashews. Stir fry for 5 minutes extra. Make the sauce by mixing together the ½ tablespoon corn starch, the water, soy sauce, hoisin sauce, rice and vinegar. Add this sauce to the wok and stir.
Add the fried chicken and toss around to coat the pieces evenly in the sauce. Add salt and pepper to taste, then serve over a bowl of steaming rice of quinoa. We like to eat Chinese Cashew Chicken with a side dish of Chinese vegetables, such as kai laan (Chinese broccoli) and collard greens stir fried in oyster sauce. Bon appetite!
