Coriander Curried Chicken

Are you familiar with that nagging sensation of hunger when you’re on a diet? The feeling that nothing will ever taste acceptable again, that your life is over because you are no longer in a position to enjoy good food? Forget all about that! This is 2014, today’s diets are balanced enough to give you great flavor in your meals.

What I love about the Dukan Diet is that it allows me to eat plenty of meat and chicken. I mean, seriously, who could resist some delicious grilled chicken breasts? I made today’s Coriander Curried Chicken recipe just because it promised to yield plenty of Indian flavored sauce to titillate my palate. This easy Indian recipe’s a keeper.

Ingredients list for Coriander Curried Chicken:

  • 4-500 gr boneless skinless chicken breasts
  • 1/2 cup Greek yoghurt
  • 4 garlic cloves
  • 1 tsp tandoori spices
  • 1 tsp curry powder
  • 1/8 tsp hot chili powder
  • 1/4 tsp salt
  • 1/2 bunch of chopped coriander leaves

Preparation method for Coriander Curried Chicken:

Place the boneless skinless chicken breasts into a shallow dish which allows enough space for them to sit for a while surrounded by the delicious yoghurt marinade.

Add the yoghurt in the blender or food processor, followed by the garlic cloves, tandoori spices, curry powder, hot chili powder, salt and half of the chopped coriander leaves. Process everything until you get a fragrant orange paste flecked with green bits. Pour the marinade over the boneless skinless chicken breasts and cover with plastic foil. Marinade the chicken for at least on hour. Overnight in the refrigerator works great as well.

When you’re ready to cook, fire up the grill or heat a grilling pan on the stove until sizzling hot. Carefully lay the chicken breasts on the hot surface and grill for approximately 5 minutes on each side. I prefer my chicken extra charred, so I give it an additional minute on the hot grill.

Now that the Coriander Curried Chicken is grilled, serve it topped with a bit of extra yoghurt and the remaining chopped coriander leaves. Bon appetite!
