Denise’s Pasta alla Carbonara
Denise’s Pasta alla Carbonara is my favorite quick dish, which also made it to my top 10 favorite pasta dishes. This easy recipe is perfect to make when you don’t have a lot of time to spend in the kitchen. On top of that, it’s not pricy at all and absolutely delicious. With this quick Italian pasta recipe, you can’t go wrong.

Ingredients list for Denise’s Pasta alla Carbonara:
- 400 gr good quality pasta (spaghetti, tagliatelle or rigatoni)
- 150 gr smoked bacon cubes
- 2 eggs (I use Bio/Organic eggs because they add more taste and color to the dish)
- 100 gr creamy goat’s cheese
- 3 Tbsp grated Parmesan cheese
- 3 Tbsp sea salt
- 3 tsp fresh cream
- 2 cloves garlic, minced
- salt and pepper to taste
Preparation method for Denise’s Pasta alla Carbonara:
Fill a large soup pan with water. Add 4 tablespoons sea salt to the water, then place the pan on the stove and bring to a boil. When the water is boiling, add the pasta. The boiling time of the pasta depends on the brand you use. Usually it’s about 4 minutes. You can try them from time to time, make sure they don’t boil too long or they will become soggy. When the pasta is ready, drain it through a colander. If you didn’t use too much salt, it doesn’t need to be rinsed. I never rinse pasta after boiling it, because I love how it gets sticky in combination with the sauce.
In a bowl, whisk the eggs like for an omelette, incorporating the creamy goat’s cheese, salt, fresh cream, garlic and pepper.
Fry the bacon cubes in a frying pan on low fire, without added oil, until some of the bacon fat melts. When the bacon is ready, add the drained spaghetti back into the pot where they were boiled and gently fold in with the bacon for a few minutes. Add the egg mixture from the bowl. Stir faster for about 1-2 minutes. The egg and the cheese will form a creamy sauce to coat the pasta.
Spoon the pasta onto large plates and sprinkle with plenty of grated Parmesan. Your delicious Pasta alla Carbonara is now ready to be served.
