Grilled Pork Cutlet with Apple-Ginger Sauce

I must tell you that I absolutely love cooking with sour apples! They are so refreshing, they have a special zing, particularly the Granny Smith variety. Since I got a bunch of sour apples yesterday , it made me think right away of grilled pork cutlet with apple-ginger ginger sauce. Pork is not the lightest meal in a hot summer day, but the apple-sauce will make this meal absolutely delicious .
Ingredients for grilled pork cutlet with apple-ginger sauce
- 4 pork cutlets
- 700gr potatoes, peeled and sliced
- 5 tbsp olive oil
- 2 medium sour apples (Granny Smith or Bramley)
- 2 tbsp dry white wine
- 2 crushed garlic cloves
- 2 tbsp honey
- 1 1/2 tbsp shredded ginger
- 1 tsp dijon mustard
- salt and pepper to taste
Instructions for preparing grilled pork cutlet with apple-ginger sauce:
Fry the sliced potatoes in 3 tbsp oil on a medium fire until they become nicely golden brown.
Peel the apples and cut them in big chunks. Place them in a pan with the ginger, 2 tbsp water and honey for about 7 minutes. Remove the sauce from the fire. Add the garlic, mustard, wine, salt and pepper, and whisk the mix for a moment. Keep it warm.
Optionally, you can add a sniff of chili powder in the sauce.
Brush the sauce on both sides of the pork cutlets, sprinkle them with salt and pepper. Bake the pork cutlets in a grill pan, or on a grill for about 3 minutes on each side until they are lightly browned .
Serve the cutlets with the apple-ginger sauce, with a side of boiled or fried potatoes and a nice green salad.
