Grilled Salmon with Fennel

The Martini compliments very well the grilled salmon and the fennel paprika mix makes this dish unforgettable.
Ingredients for Grilled Salmon with Fennel
- 250g salmon fillet
- 1 tbs fresh lemon juice
- 1 tbs olive oil
- 1 red bell pepper
- 1 yellow bell pepper
- 1 piece fennel
- 2 tbs white Martini
- a couple of chives
- freshly ground pepper
Preparation for Grilled Salmon with Fennel :
Cut the bell peppers into strips, the fennel into narrow rings and divide the salmon in two equal parts. Rub the fish fillets with salt, pepper and lemon juice. Let the marinade soak into the fish for 5 minutes, then brush the salmon with one tablespoon olive oil.
Heat a grill pan and roast the salmon fillets 2-3 minutes per side. When cooked, remove the fish from the pan and keep it warm. It is very easy to overcook salmon, therefore avoid getting dry salmon by constantly keeping an eye on the pan.
Now grill the bell pepper strips and fennel rings, stirring them occasionally. Warm two plates in the microwave oven. When the vegetables are cooked, divide them on the two hot plates. Place the salmon fillets on top of the bed of vegetables. As a final touch, drizzle one spoon of Martini over each dish and sprinkle with finely chopped chives.
