Homemade Diet Cornbread Recipe

It is moist-sweet-savory at the same time, and we couldn’t get enough! This homemade diet cornbread  is made from scratch. It sure takes a while to prepare it, but this recipe is worth it since has no additives and unwanted chemicals.

Ingredients for Homemade Diet Cornbread Recipe

  • 1 cup cornmeal (I used sweetened cornmeal, therefore I felt no need whatsoever for extra sugar)
  • 1 1/2 cups flour
  • 1 cup buttermilk
  • 2 eggs
  • 100ml melted butter (1 stick)
  • 400gr cream style corn kernels
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/4 tsp baking soda
  • 1/4 cup brown sugar

How to prepare the Homemade Diet Cornbread Recipe:

Place dry ingredients in a bowl and whisk them together in order to get a homogeneous mixture. Place eggs, sugar, buttermilk, cream style corn kernels in a food processor and pulse until mixed. Add the dry ingredients through the feeding tube of the food processor, one tablespoon at a time. When the mixture has an even aspect, add the melted and slightly cooled butter, and blend for 30 seconds more.

Pour the batter into an oven dish which has been previously greased or lined with baking paper. Bake for about 45-50 minutes in 400F/200C. The Cornbread is baked when it has a golden brown top, and it has filled the whole house with its delicious smell.

Allow some time to cool on a rack, if you can, then cut into cube shaped portions. When baked, the Cornbread is still relatively moist inside. If it becomes spongy, it is overbaked, and you must bake it for 5 minutes less next time. We used a hot air oven for preparing this recipe. A gas oven may convey slightly different results.

Enjoy it on itself, with butter or yoghurt, or with Chili con Carne, as we have.
