Meat Patties with Cheese Potatoes and Zucchini

Ingredients for Meat Patties with Cheese Potatoes and Zucchini
- 4 meat patties
- 1 kg of potatoes, peeled & cubed
- 2 zucchini, cubed
- 1 onion, chopped
- 2 garlic cloves, minced
- 150g mature cheese, grated
- 2 tbsp Piccalilli
- 2 tbs olive oil
- 2 tbs chopped parsley
- 1 tsp Italian herbs
- salt & pepper
Preparation for Meat Patties with Cheese Potatoes and Zucchini
Heat two tbs butter with the olive oil in a frying pan. Fry the potatoes for 15 minutes with the lid on the pan, on medium-low fire, stirring occasionally. When the potatoes are done, add the chopped zucchini and cook for 10 more minutes, this time uncovered. In the last 3 minutes add the garlic and onion and cook briefly. Season with salt and pepper and Italian herbs. It is now time to add the Piccalilli and the cheese to the fried potatoes and zucchini. Mix well, making sure the vegetables are well coated in the creamy cheese and Piccallili sauce.
While the vegetables are cooking, sprinkle the meat patties with salt and pepper. Heat some butter in a frying pan and fry the meat for two minutes for each side.
Before serving the Meat Patties with Cheese Potatoes and Zucchini, generously sprinkle each plate with parsley.
