One Pot Chicken and Veggies

Ingredients list for One Pot Chicken and Veggies:
1 kg chicken drumsticks
2 medium onions, chopped
5 garlic cloves, crushed
2 carrots, chopped
4 celery, stalks, chopped
4 potatoes, cubed
4 tbs olive oil
2 tablespoons balsamic vinegar
salt and pepper, to taste
½ bunch fresh parsley, chopped
1 tbs dried thyme
Preparation method for One Pot Chicken and Veggies:
Before doing anything else, preheat the oven to 220°C. Wash, peel and chop the vegetables. Sprinkle a few drops of olive oil on the bottom of an ovenproof dish, then add the vegetables. Drizzle olive oil, balsamic vinegar, salt, pepper and half of the amount of thyme over the veggies, then toss around with the help of a couple of wooden spoons to coat them evenly in the dressing.
Add the remaining olive oil, some salt, pepper and the remaining thyme over the chicken pieces. Mix everything thoroughly, preferably with your hands. This way, the chicken skin will be covered in oil and seasoning. Add the pieces of chicken over the vegetables, in the ovenproof dish, then roast for an hour or until chicken is done. Put aside the chicken pieces on plate. Toss the veggies in the baking dish and roast 5-10 minutes longer if needed. Remove the dish from the oven and garnish this delicious One Pot Chicken and Veggies with plenty of chopped parsley.
Divide the vegetables and the chicken pieces onto plates and serve. Delicious with a white wine, perhaps a Chardonnay! Bon appetite!
