Perfect Oven Chicken

While you can always buy rotisserie chicken, making your own guarantees you will know what’s inside and it will be exactly as it should: crispy on the outside, soft and delicious on the inside, infused with fresh flavors! Ingredients list for Perfect Oven Chicken:
1 free range chicken (1-1.5 kg)
Salt and freshly ground pepper
3 handfuls of fresh herbs (basil, parsley and marjoram) leaves only, finely chopped
4 tbs olive oil
1 lemon, cut in half
4 bay leaves, chopped
2 fresh rosemary sprigs
Preparation method for Perfect Oven Chicken:
Before you get started, preheat the oven and the baking tray to 225° C. Wash the chicken inside and out. Pat as dry as possible with paper towels. Rub the abdominal cavity of the bird with salt and then grab the tip of the skin on the chest side. Making sure not to tear it, pull it gently upwards. With your other hand, loosen the skin from the breast meat. Sprinkle some salt in the space that you have created and pop in the chopped herbs, then drizzle a little olive oil over them.
To stuff the chicken, use lemon, bay leaves and rosemary. Pop all these inside the abdominal cavity. Pull the skin over the breast meat so that there is no exposed flesh. Fold the wing tips in and tie the chicken as tightly as possible.
The perfect roast chicken is composed of tender breast meat inside, crispy skin on the outside and tender drumsticks. For this reason I cut the drumsticks 3 or 4 times and I rub them with some of the spice mixture. Thus, the heat can penetrate directly into the meat of the drumsticks, so that they cook faster. Rub some olive oil into the skin of the chicken and sprinkle very generously with salt and pepper.
Take the hot roasting pan from the oven and pour some oil inside. Place the chicken on the roasting pan, breast side down. Pop the pan back in the oven. Let the chicken fry for 5 minutes on one side, then turn it around. Fry for 5 minutes, then roast the chicken for 1 hour at a temperature of 225° C.
Cool down for 5 minutes before portioning this delicious bird. Exquisite!
