Every year this happens: I blink and summer passes, leaving me with my un accomplished agenda and my thoughts shifting from fruits lemonades, no-bake desserts, grilled dinners and delicious funny to make popsicle. Maybe because the summer is all about no fuss recipes, plenty of fresh fruits and veggies and a lot of outdoors fun. Oh yes and vacations. Speaking of which today recipe Raspberries Ginger and Mint Lemonade I learned to prepare in my last vacation, and i never got enough of it ever since. The most-adored flavor of the summer captured in a mason jar in liquid form? Nothing taste sweeter than this

This recipe yields 6 cups

Ingredients for Raspberries Ginger and Mint Lemonade :

  • 1/2 cup fresh mint, rinsed
  • 2 cups fresh raspberries
  • 4-5  stevia tablets or sugar (on taste)
  • 1/3 cup fresh lemon juice
  • 2 cups water
  • 1 tablespoon grated ginger

Preparation method for Raspberries Ginger and Mint Lemonade :

In a saucepan over a low-medium heat make a simply syrup by combining 1 cup of water with the stevia (or sugar). When the sweetener (sugar) is completely dissolved take it aside and let it cool down .Now in a food processor muddle the mint, ginger and raspberries together. In a large pitcher together the syrup, lemon juice and the fruit-mint-ginger puree and stir untill well blended. Place it in the fridge for few hours. Filter the liquid using a strainer and serve chilled or over ice cubes
