Simply Rainbow Salad

Its September already, the summer is (almost) gone, the schools started for a while already, and life is once again back at its busiest. And, because we need an extra kick of energy now, I prepared this awesome Simply Rainbow Salad with Pecans, Strawberry, Mango and Serrano ham. Simple, flavorful, a delicious combination between leafy and fruity, enhanced by the hearty Serrano ham will make not only your taste buds happy but your body also, because of all the vitamins, oils and nutrients you get. And since it is a very happy colorful salad we can say that the Rainbow Salad with Pecan’s, Strawberry, Mango & Serrano ham is hitting all the right spots.

This recipe yields for 4 persons

Ingredients for Simply Rainbow Salad :

  • 200g fresh strawberries
  • 2 ripe mangoes
  • 12 thin slices of raw ham
  • 4 tbs. walnut oil
  • 2 tbs. balsamic vinegar
  • 1 bag of mixed salad
  • 50 g unsalted shelled pecans

 Preparation for Simply Rainbow Salad :

Wash the salad and let it dry. Peel the mangoes and using a ceramic knife, cut the flesh from the seeds. Cube the pieces of mango. Wash and remove the greens from the strawberry and slice them. Using a knife remove the fat edges from the ham and make rolls. In a small bowl, using a whisk, mix the oil and vinegar with a pinch of salt. In a large bowl gently mix together the leafy greens with mango cubes and slices of strawberry. Divide the salad between the plates and pour the vinaigrette over the salad. Decorate each plate with ham roles and sprinkle it with the pecans.

Tip: If you skip the Serrano ham, this will make a beautiful vegetarian /vegan dish. You can also layer Simply Rainbow Salad in a mason jar.
