Soft and Spongy American pancakes

How about making some soft and spongy American pancakes this lovely morning? American pancakes are light and fluffy, soft and spongy. They are great for a breakfast or weekend brunch with family and friends. Another great thing about American Pancakes is that you can eat them in many ways: with crispy fried bacon and sunny side up eggs, with fresh fruit and whipped cream, with maple syrup, with your favourite marmalade, or just sprinkled with sugar and cinnamon.

Ingredients for Soft and Spongy American pancakes:

205gr plain flour
1 tsp baking powder
½ tsp salt
2 tbs white or caster sugar
300ml milk
2 large eggs
2 tbs melted butter plus some extra for cooking

Preparation for Soft and Spongy American pancakes:

In a large bowl sift the flour, baking powder, salt and sugar. Whisk together with the milk and the eggs, then add the melted butter while whisking. You can melt butter for a few seconds at a time in the microwave oven, or in a small pan, over very low heat. Beat the ingredients together until you have a smooth batter, without any lumps. You can also use a mixer or a blender to prepare the mixture. I used the traditional elbow grease to prepare American Pancakes. When everything is nice and frothy, cover the bowl and let the batter sit for 10 minutes.
Heat a ceramic or non-stick frying pan over medium heat and add a small knob of butter to the pan. When the butter has melted, add batter with the ladlle. The batter should be thick and spongy. Wait until the top of the pancake begins to bubble, then turn it over with a spatula. Cook until both sides are golden brown and the pancake has risen to about 1cm thick. You should get about 16 silver-dollar-sized pancakes out of this batter.
