Spicy Chicken Strips on the Skewer
What a better way of celebrating the arrival of autumn than by firing up the barbeque one last time this year! Even if you don’t have a barbeque, our Spicy Chicken Strips on the Skewer will tickle your palate with the fresh and spicy flavors of lemongrass, ginger and soy sauce. If you’re looking for a quick and easy recipe for dinner or even Sunday lunch, this is a great dish to try out.
Ingredients list for Spicy Chicken Strips on the Skewer:
- 500 gr boneless chicken drumsticks
- 1 Tbsp fish sauce
- 1 red long chili, thinly sliced
- 3 Tbsp ketjap manis
- 3 Tbsp coconut oil
- 1/2 tsp sesame oil
- 1/4 tsp five-spice powder
- 3 Tbsp lemon juice
- 1 Tbsp grated ginger
- 2 lemongrass stalks
- 5 garlic cloves
- 2-3 scallions, thinly sliced
- A handful of chopped peanuts
- Some dried chili flakes
- Bamboo skewers
Preparation method for Spicy Chicken Strips on the Skewer:
First of all, soak the skewers in a glass of water for at least one hour. Turn them around half way to be completely soaked. Thus, they won’t catch fire during the grilling process.
If you own a food processor or blender, this step of the recipe is going to be as easy as 1-2-3. Basically, what you are going to do is prepare the marinade for the boneless chicken drumsticks. Pop the following ingredients into the bowl of your kitchen gadget: fish sauce, ketjap manis, sliced chili pepper, coconut oil, sesame oil, five-spice powder, lemon juice, garlic cloves and grated ginger. Blend for one minute, then pour the marinade in a glass bowl. Cut the lemongrass into 2.5cm/1inch pieces and bash them in with the knife to reveal the refreshing aroma. Add the bashed lemongrass to the marinade.
Cut the chicken pieces into thin striped and add to the marinade bowl. Cover the glass bowl with some saran wrap and marinade f0r 30 minutes in room temperature. You could also marinade the chicken for several hours or even overnight in the refrigerator.
Before cooking, remove the pieces of chicken from the marinade and thread them on the pre-soaked skewers.
Meanwhile, heat the grill or the grill pan until sizzling hot. Grill the Spicy Chicken Strips on the Skewer for 2-3 minutes, depending on how done you prefer them to be. When grilled to your satisfaction, place the chicken skewers on a plate and sprinkle with scallions, peanuts and dried chili pepper flakes.
