Spicy Onion Ham and Cheese Sandwich

Today I made a Spicy Onion Ham and Cheese Sandwich. A simple but delicious recipe. I didn’t have the mood or the energy to make something fancier but I had to go in the kitchen and cook something. I needed my camera and my kitchen, I just couldn’t keep feeling sorry for myself and cry myself to sleep again. I lost my cat, my baby cat.

I didn’t use to be a cat lover, I wasn’t a cat hater either. I loved to admire them and play with them but it never occurred to me to take one home. Few months back, while walking my dog, I found a cat hiding in the forest. So the first instinct was to rescue the little soul. So I took it home and since it was a late afternoon in a Friday I thought I can keep it till Monday when the animal shelters and vet offices are open. But by Monday I was in love with that little black velvet furry ball.

I guess it was a love at first sight, it wasn’t easy, I had to learn to have a cat but I had the most beautiful cat and I was happy with him. And it was the sweetest one also, he would nap in my lap purring loud when I was writing and he was doing many naughty things while I was cooking. His sweet meow every time I would take a coffee, because he knew that he will get some cat milk also. And the laughter I had every evening when he was playing with my dog.

As I write this he is 6 days missing. I just woke up in the morning and he wasn’t there anymore, I knew something was wrong when I woke up and there was no meow. I called him, but there was no answer.
I been searching everywhere and every of my neighbors gardens. Placed ad’s everywhere. I called shelters and vet’s offices. But nothing, there is no trace of him and yes, I know, cats do that. They leave sometimes and they come back, well at least what I heard from almost everyone lately. “You don’t worry, he will come back “but I do worry and the house is empty without him. Even cooking and shooting today wasn’t the fun it it used to be 10 days ago; there was no Blakie to try steal the food.

But tomorrow is a new day, I hope I will wake up and he will be there again. Today my heart will skip few beats every time the phone rings, hoping someone found him and brings it back to me.

I guess I’m a cat lover after all.

The story has really nothing to do with today’s recipe Spicy Onion Ham and Cheese Sandwich but I need to get it off my chest, I need a sounding board, I need to tell someone who doesn’t think I’m crazy for not understanding that cats leave sometime.

Ingredients for Spicy Onion Ham and Cheese Sandwich:
•6 hamburger buns
•6 slices bacon
•12 slices lean ham
•6 sliced Swiss cheese
•1 big onion
•8 tbsp salted butter
•1 tsp Dijon mustard
•1 tsp Worcestershire sauce

Preparation for Spicy Onion Ham and Cheese Sandwich:
Pre heat the oven to 180C degrees.
Prepare 6 large squares of aluminum foil. They have to be big enough for wrapping each sandwich.
Slice each bread bun in half. In a skillet fry the bacon strips until golden brown and crispy. When they are ready set them aside on a paper towel to drain the remaining fat.

Peel the onion and slice it into thin rings. In a skillet over low fire fry the onions in 1 tbsp of butter, stirring occasionally for about 20-25 minutes until the onions get a nice deep golden color and sweet taste. When ready add in the skillet the remaining butter with the Dijon mustard and the Worcestershire sauce. Keep cooking for few more minutes stirring constantly.

Get the bun halves and using a kitchen brush, spread the butter mixture on both sides of the top and bottom bun halves. Place each bottom bun in the middle of a square foil before topping it with the ham slices, onions, bacon, and cheese. Put the other half on top wrap each sandwich with foil, separately. Put the sandwiches in a baking tray and bake them for about 15 minutes.

Serve them just like that or with a bowl of salad.

Tip. You can store the leftovers in the fridge.Warm it up 1 minute in a microwave and you have a delicious lunch.
